Coconut Grapefruit Cooler

Now, even though it’s cold and slushy out, who’s to say you can’t enjoy a crisp refreshing drink. This coconut grapefruit cooler is perfect for a crowd or as a quick drink for yourself. With 3 ingredients your only minutes away from a cool, refreshing drink!

I’m sure by the title you can tell that 2 of the ingredients are coconut and grapefruit. Simply squeeze the juice from 2 grapefruits, or you can use bottled grapefruit juice, the amount of fresh grapefruits you need will depend on how many servings you want. Two large grapefruits gives you about two servings! Pour the grapefruit juice into a pitcher or large glass and pour in your cream of coconut. Mix together well and sweeten to taste with agave. Mix together once again, pour over ice and that’s it! You don’t really need a recipe for this, it is mostly to taste, if you don’t want the sweetness from the agave than you don’t need to use it, if you want a more bitter taste than add more grapefruit juice, and if you want it more creamy, add more coconut cream!

Ingredients
  1. 8 ounces Ruby Red or pink grapefruit juice, fresh if possible
  2. 2 ounces cream of coconut
  3. 1 tbsp agave nectar
Instructions
  1. Combine the grapefruit juice, cream of coconut and agave in a small pitcher or bowl and stir to blend.
  2. Pour into a glass over ice.
