Spice Rubbed Roasted Pork Loin

A new one on the list of easy week night dinners, sheet pan roasted pork loin. I love working with pork loin filets there is so much you can do with them and they don’t have too be like the dry pork chops you had growing up!

A while ago I had made a Jamaican jerk style spice rub for some chicken wings, I didn’t use it all so I figured I would use the rest on this pork loin, I just bulked it up with some fresh herbs and garlic.

Start by making your spice rub, using a food processor or spice grinder combineĀ garlic, basil, thyme, fresh cracked black pepper, salt, cayenne pepper, sugar and onion powder. You just want to process it until the garlic is minced finely and everything is evenly mixed.

Preheat your oven to 425 degrees F and wrap a sheet pan with foil, this makes clean up much easier, place the pork loin filet on the sheet pan and rub all sides with your herb and spice mix. Roast in the oven 35-45 minutes until the internal temperature of the pork is 145 degrees F, let rest at room temp for about 10 minutes before slicing.

Ingredients
  1. 1 pork loin filet, 1-1.5 pounds
  2. 2 cloves garlic
  3. 1 tsp dried basil
  4. 1 tsp dried thyme
  5. 10-15 cranks fresh cracked pepper
  6. 1/2 tsp salt
  7. 1/2 tsp cayenne pepper
  8. 2 tsp sugar
  9. 1 tsp onion powder
Instructions
  1. Preheat your oven to 425 degrees.
  2. Combine the garlic, basil, thyme, fresh cracked pepper, salt, cayenne pepper, sugar and onion powder in a small food processor or spice grinder. Pulse until the garlic is minced, you can do this by hand if needed.
  3. Place the pork loin on a baking sheet covered with foil. Rub the herb mix over the entire surface of the pork.
  4. Roast in the oven for 35-45 minutes or until the internal temperature reaches 145 degrees. Allow the pork loin to rest for ten minutes before slicing.
