Creamy Peanut Butter Fudge

I have to say my favorite part of the holiday season is all the baked goods. I love doing cookie exchanges and giving out homemade treats. It’s such a fun way to try new recipes and I’m a sucker for cute holiday packaging.

Fudge is one of those pantry staples that everyone loves, so simple and you can make it just about any flavor. Not exactly sure why, but all of a sudden we had a very large collection of full and half used jars of peanut butter. We seriously had like 8 jars of crunchy and creamy, some full and some with only a spoonful. Again, not sure why.

But no need to fear, I put it to good use in this creamy peanut butter fudge. Keep in mind I used creamy peanut butter for this, but I have also made it with crunchy peanut butter, still amazing just obviously not as creamy! There are so many different variations of fudge out there, but I like to stick to a very simple version, that consist of pantry staples you will always have on hand.

Only four ingredients, milk, sugar, peanut butter, and vanilla. Can’t get any easier.

Start by heating the milk and sugar in a saucepan, over medium-high heat bring the mixture to a boil, stirring constantly,  allow the mixture to boil for 2-3 minutes until the sugar has dissolved. Than remove from the heat, stir in the vanilla extract and the peanut butter, continue to stir until the mixture is smooth and all the peanut butter is mixed in. Pour the mixture into a greased glass container, you do not need to grease your container but it helps with removing the fudge.

As you can see I used a round pie dish, so you can certainly use what every type of dish you have! Gently tap the fudge to remove any air bubbles and allow to cool at room temp or in the fridge to speed up the cooling process. Once cool Cut your fudge into cubes and keep in an airtight container for up to a week!

Ingredients
  1. 1/2 cup milk
  2. 2 cups white sugar
  3. 1 cup creamy peanut butter
  4. Dash of vanilla extract
Instructions
  1. Heat milk and sugar in a sauce pan, over high heat, bring to a boil, stirring constantly boil for 4 minutes until sugar is dissolved. If milk starts to bubble or scold remove from heat.
  2. Remove mixture from heat stir in peanut butter and vanilla extract. Stir until evenly mixed.
  3. Pour into a greased glass pan, tap to remove and air bubbles. Let cool at room temperature until the fudge has set up, cut into cubes and enjoy!
