We’re big fans of meatballs around here, why? Because they are so incredibly easy to make yourself, seriously buy your ground beef on sale and stop buying frozen meatballs. The taste is so much different, they have so much more flavor and they are always moist. Plus you can basically make a meatball out of whatever you want. As long as you have some kind of ground meat ( Turkey, beef, chicken…), bread crumbs ( which I highly recommend making yourself as you need them), eggs, and some additional items for flavor than you have a meatball.
Meatballs aren’t only for spaghetti, they can have any flavor profile you could think of. Such as these spicy sriracha and sweet chili meatballs we are making today. But any back to making meatballs yourself, I recommend buying ground beef when it is on sale, like $1.88/lb or so, using up those old heels or bread or any frozen bread hiding in your freezer, use up some herbs or leafy greens on there last legs.
Especially use up any unwanted, almost gone condiments hanging on the door of your fridge that you wont get rid of because you might use them one day, but you probably won’t ever use them one day. Use those, they work perfectly for these. Not only will your homemade meatballs be moist and flavorful, but thy will be quick, on hand, and very budget friendly.
To make the meatballs, add the ground beef int a large mixing bowl, add in breadcrumbs ( which like I mentioned, I recommend making at home using the heels of bread, and old hard baguette, or bread you might have in your freezer, mix it up in the food processor and add in any seasoning you might like), eggs, salt, pepper, garlic powder, and sliced green onions. Mix to combine.
Using a measuring spoon or a cookie scoop, scoop even sized balls of the meat mixture out, once all the mix has been used, use your hands to roll the meat mixture into uniform balls.
Bake at 425 degrees F for 20-25 minutes or until the meat is cooked through. While the meatballs are cooking in a small saucepan combine the soy sauce, honey, sriracha, garlic chili sauce, minced garlic and minced ginger. Stir to combine, heat over medium high heat. If desired steam some white rice according to package directions, to serve along side.
Once the meatballs are done baking, toss them in the sriracha chili sauce, serve with the white rice, limes, and green onion!
Spicy Sriracha and Sweet Chili Meatballs
- 2 lb. Lean Ground beef
- 1 Cup Panko bread crumbs
- 2 eggs
- ¼ Cup Thinly sliced green onion
- ½ Tsp garlic powder
- ½ Tsp salt
- ½ Tsp black pepper
- ¼ Cup Sriracha
- 3 Tbsp Soy sauce
- 3 Tbsp Honey
- 1 Tbsp Fresh ginger, minced
- 3 cloves Garlic, minced
- 3 Tbsp Garlic chili sauce
- Preheat oven to 375 degrees F. In a large mixing bowl combine the ground beef, breadcrumbs, eggs, sliced green onion, salt, pepper, and garlic powder. Using a measuring spoon or a cookie scoop, scoop out even amounts of the mixture and shape with your hands. Place them on a greased baking sheet and bake at 375 for 20-25 minutes.
- While the meatballs are cooking in a small saucepan combine the soy sauce, sriracha, honey, garlic chili sauce, minced ginger, and minced garlic. Heat over medium high heat until warm and reduced.
- Once meatballs are done cooking, toss in the sauce and serve along with white rice, limes and green onions.
