Oven Roasted Serrano Guacamole

Taking a break from all the baked goods & comfort food to share a super easy recipe for my favorite oven roasted serrano pepper guacamole. With avocados in season all year long – this recipe is a win anytime. A perfect addition to taco night, game day, or my favorite – by itself with some thin corn chips! No need for a gas stove or an outdoor fire, these peppers can be roasted in the oven!

This recipe combines both jalapenos and serrano peppers, spicy, but not too spicy. Roasting the serrano’s adds a nice “smoky” flavor and a little bit of sweetness. Feel free to add more of either pepper if you like some extra spice, leaving the seeds in will also pack some heat!

Slice the Serrano’s in half and remove the seeds, lay skin side up on a sheet pan. Turn your oven broiler on high and broil until the skin becomes charred, about 3-5 minutes. Set aside to cool.

Prepare the other ingredients, dice the roasted serrano’s once cooled. In a large mixing bowl combine the avocado, onion, tomato, jalapeño, roasted serrano, garlic, cilantro, and lime juice, mix to combine. Season with salt and more lime juice if needed. This is best served immediately but will keep for a few days in the fridge – to reduces oxidation, transfer the guacamole into an airtight container, spritz some fresh lime juice on top and press a piece plastic wrap over the top, covering the entire surface. This should help the guacamole from turning brown as fast.

**Leave the seeds in the peppers for some extra heat!

**For an extra hint of line add in the lime zest before juicing!

Ingredients
  

  • 4-5 Avocados, ripe
  • 1 small Red Onion, finely diced
  • 1 Jalapeno, finely diced, seeds removed if desired
  • 2-3 Roma Tomatoes, diced
  • 1-2 Serrano peppers, seeds removed
  • 2 Garlic cloves, minced
  • Fresh Cilantro, chopped
  • Juice of one lime, zest if desired
  • Salt, to taste
