These one-bowl chewy brown sugar cookies are a fun twist on the traditional sugar cookie. Thick and chewy, and loaded with flavor. Brown sugar gives these cookies and almost caramel like flavor, much different than traditional granulated sugar. Needing only 30 minutes to chill, these come together quickly and only require a handful of ingredients!

Highlights of these one-bowl brown sugar cookies:

  • Chewy cookies
  • Rich flavor from brown sugar and a touch of molasses
  • One-bowl recipe
  • Short chill time

Tools I used for this easy recipe:

  • USA Pan Half Sheet Pan – my go-to sheet pans, these are truly non-stick and clean up nicely.
  • KitchenAid 6 Qt. Stand Mixer – I always recommend a stand mixer as it saves time and helps to keep baked goods consistent.
  • Rubber Spatula – a must for any home baker! Perfect for scrapping cookie dough out of the mixing bowl.
  • Cookie Scoop – my go to for getting even sized cookies that bake perfectly each time!

Tips for successful cookies:

  • Don’t overmix, mix just long enough to incorporate ingredients.
  • Allow dough to chill so the fat has time to set up.
  • Use a cookie scoop to get even sized cookies
  • Allow cookies to cool on the baking sheet before transferring to a cooling rack
  • Enjoy fresh!

Instructions for the easy one-bowl cookie recipe:

  • Preheat oven to 350 degrees F, line a baking sheet with parchment paper, set aside.
  • In the bowl of a stand or hand mixer fitted with a paddle attachment, cream the butter and sugar together until fluffy, about 3-4 minutes. Add in the vanilla extract, molasses, and eggs – one at a time. Scrap down the sides of the bowl.
  • In a small mixing bowl combine the flour, baking soda, and salt. Stir to combine. Slowly add the dry ingredients into the wet ingredients, mix on low until fully combined. Cover the dough and allow to chill for 30 minutes.
  • Using a portion scoop, scoop even sized portions of dough. Roll each ball of cookie dough in granulated sugar. Place on the prepared baking sheet, spacing 2 inches apart. Bake at 350 for 9-11 minutes until golden brown. The cookies will be soft. Allow to cool slightly on the baking sheet, transfer to a wire rack to finish cooling. Store in an airtight container for up to a week!

If desired, roll the cookies in sugar before baking!
