Instructions for the chocolate almond date bites:
- In the bowl of a food processor, combine the almonds, dates, cocoa powder, coconut, and maple syrup. Pulse for 30-60 seconds. Scrape down the sides if needed, stir and pulse again for 30-60 seconds. The mixture should be uniform and sticky.
- Use a portion scoop or measuring spoon to scoop even sized bites, roll into circles. Store in an airtight container in the fridge for up to a week!
