Grocery List:
- Fresh Green Beans
- Olive Oil
- Butter
- Red Onion
- Garlic
- Slice or Slivered Almonds
- Fresh Thyme
- Salt
- Pepper
Sauté fragrant red onion, garlic, almonds, and thyme in butter and olive oil
Instructions for the easy green bean almondine:
Fill a large bowl with ice water, set aside. Bring a large pot of salted water to a boil, add in the trimmed green beans. Boil for 3-4 minutes, the green beans will still be slightly crisp. Cook longer if you want them softer.
Immediately after cooking, transfer to the bowl of ice water. This shocks the beans so they stop cooking and stay bright green.
Heat a large sauté pan over medium-high heat, add in the butter and olive oil. Once hot add in the diced red onion and sauté for 2-3 minutes until soft and fragrant. Add in the minced garlic and almonds, sauté again for 1-2 minutes. Add in the cooked green beans, sauté together for another couple minutes. Season to taste with salt, pepper, and fresh thyme.
Serve the green beans spooning over any of the excess almond mixture, enjoy immediately!
