Easy Soft & Chewy Oatmeal Raisin Cookies

These easy soft & chewy oatmeal raisin cookies are a delicious classic cookie. Classic oatmeal cookies made with brown sugar, cinnamon, and old-fashioned oats studded with raisins. I like to add golden raisins as well for some variation. If you’re a raisin lover you’ll love these, they’re the best oatmeal raisin cookies!

Add in chopped walnuts, pecans, milk or white chocolate chips if desired!

Simply make the cookie dough according to the recipe, scoop even sized amounts of dough onto a sheet pan and place in the freezer until hard. Transfer the cookie dough to an airtight container or freezer bag labeled with the date, type of cookie, and baking instructions. Keep in your freezer stash for 6-8 months. Remove desired amount when needed, bake, and enjoy! You may even want to make a double batch!

TOOLS I USED FOR THIS RECIPE:

  • USA Pan Half Sheet Pan – my go-to sheet pans, these are truly non-stick and clean up nicely. They are also large enough so cookies can bake in fewer batches.
  • KitchenAid 6 Qt. Stand Mixer – I always recommend a stand mixer as it saves time and helps to keep baked goods consistent (or substitute an electric hand mixer)
  • Rubber Spatula – a must for any home baker! Perfect for scrapping cookie dough out of the mixing bowl.
  • Portion Scoops – my go to cookie scoop for getting even sized cookies that bake perfectly each time!
  • Round Cookie Cutter – these are my go-to round cookies cutters, they are perfect for scooting warm, freshly baked cookies to keep them perfectly round.

Instructions for the easy oatmeal raisin cookies recipe:

  • Preheat oven to 350 degrees F. Line baking sheets with parchment paper, set aside. In a medium bowl, combine the flour, baking powder, baking soda, cinnamon and salt, set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment or a hand mixer, combine the butter and sugars (can also cream by hand in a large bowl using an electric mixer). Cream for 2-3 minutes until light and fluffy. Add in the eggs, one at a time, and the vanilla. Scrape down sides of the bowl.
  • Slowly add in the dry ingredients. Mix until fully combined, fold in the oats and raisins.
  • Cover with plastic wrap and allow the dough to chill for an hour, overnight if needed.
  • Using a portion scoop or measuring spoon, scoop even sized balls of cookie dough – roughly 1 oz. Arrange evenly on the prepared baking tray, leaving about 2 inches between each cookie.
  • Bake at 350 for 10-12 minutes until golden brown, cookies will still be soft in the middle. Allow to cool for a few minutes on the cookie sheet before transferring to a wire rack. Sprinkle with sea salt if desired and enjoy!

*If desired mix in chopped walnuts or pecans for extra crunch!

*If needed substitute quick oats or instant oats ( old-fashioned oats give a slightly better texture).

*Use a round cookie cutter or mason jar ring to gently scoot the cookies after baking, while they are still warm. This will create perfectly round cookies, this can be a good trick if the cookies have spread a lot during baking. These are my go-to round cookie cutters!

  • 1 tsp Baking powder
  • 1 tsp Baking Soda

  • 1 tbsp Ground Cinnamon

  • 1 cup Light brown sugar, packed
  • 2 Eggs, room temperature
  • 1 tbsp Vanilla
  • 1 1/2 cups Old fashioned oats
  • 2 cups Raisins
