Fruit and Nut Energy Bites

These fruit and nut energy bites are a perfect quick, wholesome snack. Dried fruits, nuts, peanut or almond butter, dates, and some salt make up these easy bites. Easily customizable and great for on the go, pack these as a satisfying lunchbox treat, for a road trip, or grab a few in the morning for a good source of fiber and protein. These energy bites will keep in an airtight container in the fridge for up to a week. Plus they are much more budget friendly than the store bought bites.

5 Ingredient Protein Bites

Grocery List for Fruit and Nut Energy Bites:

  • Dried apricots
  • Medjool dates, pitted
  • Pinch of salt
  • Natural peanut butter (could substitute almond butter or cashew butter)
  • Cashews (could substitute macadamia nuts)
  • Almonds
  • Honey (could substitute maple syrup or agave)

These can be kept at room temperature, but I prefer keeping them in the fridge!

Instructions:

  • In the bowl of a food processor or blender combine the pitted dates, apricots, salt, honey, peanut butter, almonds, and cashews.
  • Pulse in 15 second increments until the mixture starts to come together. Scrape the side of the bowl as needed. After about a minute the mixture should be uniform and stick together when formed into a ball.
  • Use a small portion scoop or a measuring spoon to scoop out even sized amounts of the fruit and nut mixture. Using your hands, roll into balls. If desired, roll the finished bites in chopped nuts. Set on a cookie sheet lined with parchment paper, let chill in the fridge for 10-15 minutes. Transfer to an airtight container and store in the fridge for 5-7 days.

*Look for dried fruit with no added sugar

Variations or additions:

  • Roll in shredded, unsweetened coconut
  • Substitute other dried fruit like dried cherries, cranberries, raisins, or any fruit combination
  • Added bonus of cacao nibs or cocoa powder for a chocolaty taste

  • 2 cups Medjool dates, pitted

  • 1/2 cup Almonds, roasted and unsalted
  • 1/2 cup Cashews, roasted and unsalted
  • 1/2 cup Peanut butter
  • 2 tbsp Honey
  • 1 tsp Salt
