Herbed Chicken Pitas with Bacon, Marinated Tomatoes, and Feta

These herbed chicken pitas are packed with herb marinated chicken, crispy bacon, creamy feta cheese, and easy marinated tomatoes! Pita or naan rounds make the perfect base to stuff or top, they’re even better warmed. A spread or sprinkle of creamy feta cheese paired with the tender chicken and flavorful marinated tomatoes is the perfect combo!

Grocery list for the herbed chicken pitas:

  • Chicken
  • Olive oil
  • Fresh herbs
  • Spices, salt, and pepper
  • Cherry tomatoes
  • Bacon
  • Feta
  • Pita Bread or Naan

Herb marinated chicken is quick and easy!

Instructions for the herbed chicken pitas:

For the Herbed Chicken:

Cube the chicken breast into bite size pieces. In a large mixing bowl combine the diced chicken, olive oil, rosemary, thyme, dill, garlic, salt, and pepper. Mix to combine and let marinate for 45 minutes.

Preheat oven to 425. After the chicken has had time to marinate, transfer to a sheet pan and spread out evenly. Transfer to a preheated oven and bake for 10 minutes. Remove from the oven, stir, and bake for another 7-10 minutes. The chicken should reach an internal temperature of 165 degrees. Set aside.

For the Marinated Tomatoes:

In a medium mixing bowl combine the grape or cherry tomatoes, you can leave these whole or cut them in half, the olive oil, thyme, dill, salt, and pepper. Stir to combine and allow to sit and marinate until ready to assemble.

For the Pitas:

Warm your pita or naan rounds, set aside. Either crumble the feta cheese or use a hand or stand mixer to mix feta and a little milk until smooth and creamy. Chop the bacon and any remaining fresh herbs for garnish.

To assemble, take a warmed pita round, you can stuff or top these. Place a few chunks of the herbed chicken on top, spoon over a few of the marinated tomatoes, add some chopped bacon, the feta cheese, and top with fresh herbs.
