Meal Prep Garlic Pork Tenderloin with Orzo

This meal prep garlic pork tenderloin with orzo is a great lunch or dinner. Tender pork in a garlic rub served over herbed orzo and roasted asparagus. Not only is this a super simple meal but it is also very quick to make! Roasting pork tenderloin on a sheet pan is so easy and makes clean up a breeze. Herbed orzo is a nice substitute to rice, you could also substitute steamed rice or other cooked pasta.

Instructions:

Orzo:

  • Cook orzo according to package directions, allow to cool. In a mixing bowl combine the cooked orzo, olive oil, salt, pepper, garlic, and fresh herbs. Stir to combine.

Asparagus:

  • Preheat oven to 375 degrees F, place trimmed asparagus on a sheet pan, drizzle with olive oil, salt and pepper. Toss to combine. Bake at 375 for 10-12 minutes, or until tender.

Pork:

  • In a small mixing bowl combine the olive oil, salt, pepper, garlic powder, onion powder, minced garlic, and paprika. Rub evenly on the pork tenderloin. Place on a sheet pan and bake a 375 for 22-25 minutes or until the pork reaches an internal temperature of 145 degrees F. Once done, let rest for 10-15 minutes before slicing.
  • Evenly divide the orzo into five meal prep bowls. Top with roasted asparagus and sliced pork. Seal and store.

Ingredients
  

For the orzo:

  • 1 1/2 cups Dry orzo, cooked according to package instructions
  • 3 tbsp Olive oil
  • 2-3 cloves Garlic, minced
  • Fresh dill, parsley, and basil, chopped finely
  • Salt and pepper, to taste

For the asparagus:

  • 2 lbs. Asparagus, trimmed
  • 2 tbsp Olive oil
  • 2 tsp Salt
  • 1 tsp Black pepper

For the pork:

  • 1 – 1 1/2 lb. Pork tenderloin
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tbsp Garlic powder
  • 1/2 tsp Paprika
  • 1 tsp Onion powder
  • 2-3 cloves Garlic, minced
