Peach and Brie Puff Pastry Bites

These peach and brie puff pastry bites are the perfect combo of sweet and salty. Flaky puff pastry, tender peaches, brie cheese, honey, and thyme. The baked peaches pair very well with the salty brie cheese, a drizzle of olive oil and some cracked black pepper add the perfect touch. Serve with an extra drizzle of honey and some fresh thyme sprigs.

Cut each puff pastry sheet into 4 pieces, layer a few slices of brie cheese and a few sliced peaches. Drizzle with olive oil, sprinkle with salt and pepper. Crimp all edges with a fork and brush with egg wash. Drizzle with honey before baking.

Instructions for the puff pastry bites:

Preheat oven to 400 degrees F. Line two large baking sheets with parchment paper. Cut each sheet of puff pastry into 4 even pieces, transfer the puff pastry squares to the prepared baking sheet.

In the middle of each puff pastry square, arrange a layer of the sliced brie and top with a layer of peach slices. Fold the edges of the puff pastry inwards, use a fork to press down. Brush the edges of each pastry with beaten egg. Drizzle each pastry with olive oil, a light drizzle of honey and season with salt and pepper.

Bake at 400 for 18-20 minutes until the brie is melty and the puff pastry is cooked through. Remove from the oven, drizzle again with honey and sprinkle with fresh thyme. Serve immediately and enjoy!

  • 2-3 Fresh peaches, sliced thin
  • 1/2 cup Honey
  • Olive oil, to drizzle
  • Salt and pepper
  • 1 Egg, whisked
  • Fresh thyme
