These peanut butter chocolate chip oatmeal blondies are thick, chewy, and loaded with rich milk chocolate. Peanut butter cookie dough with chocolate, oats, and topped with sea salt. This dough requires no chill time and the bars bake up in less than 30 minutes. Perfect for birthdays or gatherings! Cut these up into bite sized pieces or decorate and serve as a cookie cake type dessert.

Tips for successful oat bars:

  • Don’t overmix ingredients, only mix until incorporated.
  • Grease AND line your baking pan. I like to grease the bottom and corners really well and over line with a piece of parchment paper so I can easily lift out my bars.
  • Allow bars to cool completely, this helps so they don’t fall apart! Let them cool if you want nice even bars.

First Steps:

  • Combine peanut butter and melted butter
  • Add in sugars
  • Mix in eggs and vanilla
  • Add in dry ingredients

Grocery List & Substitutions:

  • All-purpose flour
  • Baking powder
  • Salt
  • Unsalted butter, melted
  • Creamy peanut butter
  • Granulated white sugar
  • Light brown sugar
  • Large eggs
  • Vanilla extract
  • Old fashioned rolled oats
  • Chocolate chips or chocolate chunks
  • Sea salt

Second Steps:

  • Fold in oats and chocolate
  • Grease and line baking dish
  • Transfer dough into dish and press down
  • Top with extra chocolate
  • Bake and enjoy

Instructions for the blondies:

  • Preheat oven to 350 degrees F. Grease or line an 9×13″ baking pan, set aside. In a small mixing bowl combine the flour, baking powder, and salt, stir to combine and set aside.
  • In a large mixing bowl, combine the melted butter and peanut butter, mix until combined. Add in the sugars and mix for an additional 1-2 minutes. Add in the eggs, one at a time and the vanilla.
  • Slowly add in the dry ingredients and mix until combined. Fold in the chocolate and oats, transfer into the prepared baking pan. If desired, top with extra chocolate chips.
  • Bake at 350 degrees for 22-25 minutes or until a toothpick inserted comes out clean. Remove form the oven and let cool on a wire rack, sprinkle with flaky salt and allow to cool before cutting.

Ingredients
 
 

  • 1 3/4 cups All-purpose flour
  • 1 tsp Baking powder
  • ½ tsp Salt
  • 1/2 cup Unsalted butter, melted
  • 3/4 cup Creamy peanut butter
  • 1 cup Light brown sugar, packed
  • 1 cup Granulated white sugar
  • 2 Eggs, room temperature
  • 1 tbsp Vanilla extract
  • 12 oz. Semi sweet chocolate chips
  • 1 cup Old fashioned oats
  • Flaky sea salt, for garnish

Instructions
 

  • Preheat oven to 350 degrees F. Grease or line an 9×13" baking pan, set aside. In a small mixing bowl combine the flour, baking powder, and salt, stir to combine and set aside.
