
It’s the weekend and with that said a simple cocktail is on the menu. This pineapple basil gin smash is so refreshing and it comes together in minutes. Fresh, tart pineapple muddled with fresh basil and sugar, mixed with your favorite gin and topped off with club soda. A summer cocktail, in January! This cocktail may sound fancy, but made with only 5 ingredients it sure is easy to make!
I garnished with some grilled pineapple chunks, but the cocktail itself would really be great with grilled pineapple as well. If you are making these for a crowd or just want to go all out, use the pineapple rinds and core to make a simple syrup. Use the pineapple simple syrup instead of traditional granulated sugar for more pineapple flavor. You could also top your cocktail off with a flavored seltzer if you like it a little sweeter.

- Muddler
Ingredients
- 1 tsp Granulated sugar
- 1/4 cup Fresh or frozen pineapple chunks, if using frozen allow to thaw
- 2-3 Basil leaves, finely chopped
- 2 ounces Gin
- Club soda
Instructions
- Combine the sugar, pineapple chunks, and basil in an old-fashioned glass. Use a muddle or the end of a wooden spoon to muddle the ingredients together. Add the gin, stir to combine. Top off with club soda and ice, garnish with pineapple and basil if desired.
