Chocolate Cranberry & Almond Granola


Grocery List:
- Old-fashioned oats
- Cashews
- Almonds
- Chocolate Chunks
- Honey
- Pumpkin puree
- Coconut oil
- Cinnamon
- Salt
- Ground ginger
- Ground Cloves


Instructions for the pumpkin spice granola:
Preheat oven to 300 degrees F. Line a large baking sheet with parchment paper, set aside.
In a large mixing bowl combine the oats, almonds, cashews, cinnamon, ginger, cloves, and salt. Mix to combine.
In a separate mixing bowl combine the honey, melted coconut oil, vanilla, and pumpkin puree. Stir well to combine, pour over the oat mixture and mix until evenly combined.
Spread the granola mixture out evenly onto the prepared baking sheet and bake 15 minutes, remove from the oven and stir. Place back in the oven and bake for 15 minutes.
Remove form the oven and allow to cool, stir in the chocolate chunks and enjoy. This will keep in an airtight container for up to a month!
Notes
**If you want crunchier granola, add 5-7 minutes onto the baking time.

Ingredients:

- 1 cup Raw almonds, chopped
- 1 cup Cashews, chopped
- 1 tsp Ground cinnamon
- 1/2 tsp Ground cloves
- 1/2 tsp Ground ginger
- 1/2 tsp Salt
- 1/2 cup Honey
- 2 tbsp Coconut oil, melted
- 1 cup Pumpkin puree
- 1 tsp Vanilla extract
- 1 cup Chocolate chunks
