Shaved Brussel Sprout Salad with Bacon Vinaigrette

This shaved brussel sprout salad with bacon vinaigrette is the perfect side dish. Brussel sprouts, toasted almonds, shaved parmesan, and bacon tossed in an easy bacon vinaigrette. This salad is very simple, needing only 5 main ingredients. Shaving the brussel sprouts thinly and tossing them in the easy bacon vinaigrette make them tender but still nice and hearty. Serve this as a hot or cold salad.

Toasting the almonds in bacon fats adds extra flavor and warmth!

Grocery List:

  • Brussel Sprouts
  • Bacon
  • Parmesan
  • Almonds
  • Balsamic Vinegar
  • Salt & Pepper
  • Mustard
  • Honey

Instructions for the shaved Brussel sprout salad with bacon vinaigrette:

In a sauté pan, cook the bacon over medium-high heat until cook through. Remove from the pan and place on a towel lined plate to absorb any extra grease.

While the bacon fat is still warm, toast the chopped almonds over medium-high heat for 2-3 minutes until fragrant and toasted. Allow the bacon fat to cool.

For the Bacon Vinaigrette:

In a small mixing bowl whisk together the reserved bacon fat, Dijon mustard, honey, salt, and pepper. Mix well to combine.

In a large mixing bowl toss together the shaved Brussel sprouts and the bacon vinaigrette. Transfer to a large platter or serving bowl, top with the cooked bacon, toasted almonds, and shaved parmesan. Serve immediately and enjoy!

  • 2, 16 oz. bags Brussel sprouts, shaved thinly
  • 1/2 lb. Bacon, chopped
  • 1/2 cup Roasted Almonds, roughly chopped
  • 3/4 cup Shaved parmesan

For the Bacon Vinaigrette:

  • 1/4 Bacon fat
  • 3 tbsp Dijon Mustard
  • 1/4 cup Honey
  • 1/2 tsp Salt
  • Fresh ground black pepper
