Granola is one of the easiest things to make at home, it makes a great quick breakfast or on the go snack. I’ve posted quite a few granola recipes, but this recipe is a simple and can be adjusted to your liking. Not only is store bought granola expensive, but it is also full of added sugars. Making it at home not only saves some bucks, it also gives you the chance to customize your granola.

Looking to cut back on the added sugars, choose fresh ground peanut butter made with just peanuts and no sugar added dried fruits. Use honey or pure maple syrup as natural sweeteners, and add extra flavor with spices such as cinnamon. This granola is loaded with chopped almonds, chewy dried cranberries, and a mixture of seeds. Creamy nut butter and pure maple syrup results in a soft and chewy, yet crunchy texture. I break my granola into larger chunks for snacking but you can also break it into smaller crumbles. If you want crunchier granola simply bake for 5-7 minutes longer then the recipe suggests.

We love to eat our granola by itself, on top of yogurt or smoothie bowls, or like cereal with a dairy alternative – it’s the best with vanilla almond milk! Whenever I make granola, I make a lot. It’s great to keep on hand since it will stay fresh in an airtight container for up to 4 weeks. I also always give some away, put some in a mason jar and it makes a nice hostess gift or addition to a gift basket. If your like me and most of your family and friends live near you, but you haven’t been seeing them as much as you used to. Make up a batch of granola, package into glass jars, maybe add a ribbon, and drop off to friends and family – everyone appreciates homemade treats!

Instructions

Preheat oven to 300 degrees F. Line a large baking sheet with parchment paper, set aside.

In a large mixing bowl combine the oats, almonds, pepitas, and sunflower kernels, stir to combine. In a microwavable safe bowl combine the coconut oil, maple syrup, and peanut butter. Microwave 30-45 seconds until warm, whisk to combine. Stir in the vanilla, cinnamon, and salt. Pour the liquid mixture over the oat mixture. Using a rubber spatula, gently fold all the ingredients together until fully incorporated.

Spread the granola mixture out evenly onto the prepared baking sheet and bake 15 minutes, remove from the oven and stir. Place back in the oven and bake for 15 minutes. Once done, remove from the oven and stir in the dried cranberries. Serve immediately or store in an airtight container up to 4 weeks!

  • 4 cups Old-fashioned oats
  • 1/2 cup Raw almonds, chopped

  • 1/2 cup Raw Pepitas
  • 1/4 cup Pure maple syrup or honey
  • 1/4 cup Melted coconut oil
  • 1/2 cup Peanut butter
  • 1 tsp Ground cinnamon
  • 1 tsp Vanilla extract
  • 1/2 tsp Salt
  • 1 1/2 cups Dried cranberries, cherries, or raisins

Notes

**If you want crunchier granola, add 5-7 minutes onto the baking time.
