Cinnamon Sugar Apple Cider Muffins

These apple cider donut muffins are light, fluffy, and full of spiced apple cider! A crunchy cinnamon sugar topping makes the perfect bite. All the flavor of your classic apple cider donut without all of the work, you can make these muffins with traditional spiced apple cider or spice your own. These muffins make a great after school snack or sweet treat.

Ingredient List:

  • Unsalted butter
  • Granulated Sugar
  • Brown Sugar
  • Vanilla
  • Milk
  • Apple Cider
  • Large eggs
  • Cinnamon
  • Ginger
  • Nutmeg
  • Allspice
  • Flour
  • Kosher salt
  • Baking Soda

Instructions for the apple cider muffins:

Preheat oven to 350 degrees F, line or grease a muffin/cupcake pan and set aside.

In a small saucepan combine the apple cider, nutmeg, allspice, ginger, and cinnamon Bring to a boil over medium-high heat and allow to simmer until reduced by about half. Allow the apple cider concentrate to cool slightly.

In a medium bowl, combine the flour, baking powder, salt, stir to combine.

In a large bowl combine the spiced apple cider mixture, vanilla, melted butter, milk, and the egg. Whisk well to combine. Add in the sugars and mix again.

Add the dry flour mixture into the wet ingredients and fold to combine, remove any lumps if necessary.

Using a portion scoop, fill each muffin tin 2/3 of the way full with apple cider muffin batter. Bake for 20-22 minutes in a 350* f oven, until a toothpick inserted into the middle comes out clean. Transfer to a cooling rack.

In a small bowl melt the remaining butter for the topping, in a separate bowl mix together the cinnamon and sugar. Dip each muffin into the melted butter than into the cinnamon sugar mixture, and enjoy! Store in an airtight container for up to 3 days.

  • 2 cups All-purpose Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Apple Cider
  • 1 tsp Ground Nutmeg
  • 1 tsp Ground Ginger
  • 2 tsp Ground Cinnamon
  • 1/2 tsp Ground Allspice
  • 1/2 cup Brown Sugar, packed
  • 1/2 cup Sugar
  • 1/2 cup Butter, melted
  • 2 tsp Vanilla Extract
  • 1/4 cup Almond milk, unsweetened, can substitute dairy milk or any other milk alternative
  • 1 Egg, room temperature

For the cinnamon sugar topping:

  • 1/4 cup Butter, melted
  • 1/2 cup Sugar
  • 3 tsp Cinnamon
