Light vanilla cake loaded with fresh strawberries. This strawberry cake is fresh, airy, topped with tangy cream cheese frosting and fresh berries! This cake is one of my favorite spring bakes, and a perfect way to use up in-season strawberries! This strawberry cake comes together easily and bakes quickly in a loaf pan. Serve with a big spread of cream cheese frosting, more fresh berries, and some spring floral!
An extra dollop of cream cheese frosting is a must!

Instructions for the strawberry cake with cream cheese frosting:
For the Strawberry Cake:
Preheat oven to 350 degrees F. Generously grease and loaf pan*, set aside.
In a small mixing bowl whisk together the flour, baking powder, and salt. Combine and set aside. In the bowl of a stand or hand mixer fitted with a paddle attachment, cream together the sugar and butter for 4-5 minutes. Do not skip this part, you want to have a light, fluffy consistency. Add in the whole eggs, one at a time, the egg yolk, and vanilla extract. Mix until fully combined. Slowly mix in the milk. Once the wet ingredients are combined, slowly mix in the prepared dry ingredients, mixing until thoroughly incorporated. Gently fold in the diced strawberries.
Pour the batter into the greased loaf pan, bake at 350 for 50-55 minutes, or until a toothpick inserted into the middle come’s out clean. Once done, remove the loaf from the oven and allow to cool for 10-15 minutes. Flip and gently remove from the loaf pan. Allow to cool before frosting.
For the Cream Cheese Frosting:
In the bowl of a stand or hand mixer fitted with a paddle attachment, cream the cream cheese until smooth. Slowly add in the powdered sugar until completely combined. Mix in the vanilla extract, and milk. If the mixture is too thick, add in an extract tablespoon of milk until desired consistency is reached.
Spread the cream cheese frosting over the top of the cooled strawberry loaf, if desired top with more fresh strawberries or other berries!

- 2 Whole eggs, room temperature
- 1 Egg yolk, room temperature

- 1 1/4 cups All-purpose flour
- 1 tbsp Baking powder
- 1 tsp Salt
- 1/4 cup Milk, can substitute a non-dairy like almond milk
- 2 cups Fresh strawberries, small dice

- 8 oz. Cream cheese, softened
- 2 cups Powdered sugar
- 1 tbsp Vanilla extract
- 1-2 tbsp Milk, can substitute a non-dairy like almond milk
