Quick Vanilla Almond Granola

Crunchy oat clusters, chopped almonds, chia seeds and shredded coconut in a vanilla and honey mixture. Baked until golden brown and crunchy, this vanilla almond granola recipe is simple and flavorful. Perfect for smoothie bowls or parfaits, and delicious on its own.

The best part about homemade granola is how customizable it can be. If you like soft, chewy granola, I recommend reducing the baking by 5-7 minutes and really packing the granola down before baking. If you like you like your granola crunchier, increase the bake time by 3-5 minutes and spread out thinly before baking.

Homemade vanilla almond granola will keep in an airtight container for up to four weeks! I mention this in greater detail in my Almond Joy Energy Bites recipe, but I always call for old fashioned oats in my granola recipes not quick oats. Why? Old fashioned oats, also called rolled oats, are rolled into flakes. That produces larger whole-grain oats that keep fresh for longer amounts of time. Since they are a larger grain, the outcome is a crunchy texture!

Instructions for the vanilla almond granola:

Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper, set aside.

In a large mixing bowl combine the oats, almonds, cinnamon, and chia seeds, stir to combine. Combine the honey, peanut butter, vanilla, and salt, stir until fully combined. Pour the liquid mixture over the oat mixture. Using a rubber spatula, gently fold all the ingredients together until fully incorporated.

Spread the granola mixture out evenly onto the prepared baking sheet and bake for 10 minutes, remove from the oven and stir. Place back in the oven and bake for 15 minutes. Once done, remove from the oven and stir in the shredded coconut. Serve immediately or store in an airtight container up to 4 weeks!

  • 1/4 cup Chia seeds
  • 1 tsp Ground cinnamon
  • 1/2 cup Honey or pure maple syrup
  • 1/2 cup Peanut butter
  • 1 tbsp Vanilla extract
  • 1/2 tsp Salt
  • 1/2 cup Shredded coconut, if desired
