Whipped Ricotta Toast with Peaches, Honey, and Thyme

This whipped ricotta toast is the perfect blend of sweet and savory. Creamy ricotta topped with fresh peaches, honey, and fresh thyme. Crispy sourdough is the perfect base, but you could also spread this on crackers or another bread of choice. This is such a simple appetizer and perfect for fresh summer produce!

How can unused ricotta be stored?

Any unused whipped ricotta can be store in an airtight container in the fridge for 3-4 days. Separation should not occur, but if it does, give it another quick whip before using.

Grocery List for the ricotta toast:

  • Ricotta
  • Bread
  • Honey
  • Peaches
  • Fresh Thyme
  • Berries
Whipped ricotta toast makes a great appetizer or snack!

Instructions

Toast sliced sourdough and set aside.

In the bowl of a food processor or blender combine the ricotta, honey, and a pinch of salt, blend until smooth. Top the toasted sourdough with the whipped ricotta, sliced peaches, a drizzle of honey, and fresh thyme.

If desired top the finished toast with fresh berries and serve immediately. Any unused ricotta will store in the fridge for 3-4 days.

You can also make this with plums or nectarines. If you wanted to go a more savory route you could top with marinated cherry tomatoes or sautéed onions.

  • 1 15 oz. Container whole fat ricotta cheese
  • 1/4 cup Honey, plus extra for drizzling
  • 1 Loaf sourdough bread, sliced
  • 2-3 Fresh peaches, sliced thin
  • Fresh thyme
  • Fresh berries, for garnish
