Shaved Brussel Sprout Salad with Bacon Vinaigrette

Brussel sprouts, toasted almond, bacon, and shaved parmesan in a warm bacon vinaigrette

Ingredients
2, 16 oz.bagsBrussel sprouts, shaved thinly
1/2lb.Bacon, chopped
1/2cupRoasted Almonds, roughly chopped
3/4cupShaved parmesan
For the Bacon Vinaigrette:
1/4Bacon fat
3tbspDijon Mustard
1/4cupHoney
1/2tspSalt
Fresh ground black pepper
Instructions
In a sauté pan, cook the bacon over medium-high heat until cook through. Remove from the pan and place on a towel lined plate to absorb any extra grease.
While the bacon fat is still warm, toast the chopped almonds over medium-high heat for 2-3 minutes until fragrant and toasted. Allow the bacon fat to cool.
For the Bacon Vinaigrette:
In a small mixing bowl whisk together the reserved bacon fat, Dijon mustard, honey, salt, and pepper. Mix well to combine.
In a large mixing bowl toss together the shaved Brussel sprouts and the bacon vinaigrette. Transfer to a large platter or serving bowl, top with the cooked bacon, toasted almonds, and shaved parmesan. Serve immediately and enjoy!
