Meal Prep Sausage with Peppers, Onions, and Crispy Potatoes

Ingredients
For the Crispy Potatoes:
2-2 1/2lbs.Russet potatoes, diced
2tbspOlive oil
1tbspSalt
Fresh ground black pepper
1tspPaprika
2tspGarlic powder
For the Sausage, Onions, and Peppers
2tbspOlive oil
3Cloves garlic, minced
2largeWhite onions, sliced thin
4-5large Bell peppers, sliced thin
1tspSalt
Fresh ground black pepper
1tspGarlic powder
1tspChili powder
1lb.Andouille sausage, sliced thin, precooked*
Instructions
For the Crispy Potatoes:
Preheat oven to 425 degrees F. Line a sheet pan with parchment paper, set aside.
In a mixing bowl toss diced potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread out evenly onto the prepared baking sheet and bake at 425 for 25-30 minutes. Until tender and crispy, if desired place under the broiler for 3-4 minutes to get extra crispy.
For the Sausage, Onions, and Peppers:
In a large stock pot or Dutch oven, heat olive oil over medium-high heat. Add in garlic and onion, sauté for 2-3 minutes. Add in sliced peppers, sauté for another 2-3 minutes, add in the andouille sausage. Season with salt, pepper, garlic powder, and chili powder. Stir to combine and sauté everything together for 4-5 more minutes until the sausage has browned slightly and the peppers and onions are tender.
Evenly divide the crispy potatoes between 5 containers, top each container with the sausage, onions, and pepper mixture. Allow to cool completely, seal, and store.
Notes
*Andouille sausage is a smoked meat and is typically precooked.
