Ingredients
8 oz.Arugula
1largeGreen Apple, julienned tossed in lemon juice if needed to stop browning
1/2cupWalnuts, chopped
2-3Chicken breasts, grilled and sliced
1/2cupGolden raisins
Crumbled blue cheese, optional
For the poppy seed dressing:
1/2cupOlive oil
1/4cupFresh squeezed orange juice
1tbspDijon Mustard
2tbspHoney
2clovesGarlic, minced
1/2tspSalt
Fresh cracked black pepper
1tbspPoppy seeds
Instructions
For the poppy seed dressing:
In a mason jar combine the olive oil, orange juice, mustard, honey, garlic, salt, pepper, and poppy seeds. Place on the lid and shake well until combined.
In a large mixing bowl add in the arugula, green apples, and walnuts. Drizzle on the poppy seed dressing and toss to combine. Transfer onto a serving platter and top with the sliced grilled chicken, golden raisins, and blue cheese if desired. Serve immediately.
