Instructions
For the jalapeño Simple Syrup:
In a saucepan combine the sugar, water, and jalapeños.
Heat over medium-high heat until the sugar is dissolved. Once the mixture starts to bubble reduce heat to medium-low and allow to simmer for 25-30 minutes. Once the mixture has thickened, remove from heat and allow to cool.
Strain through a mess strainer, removing any large pieces of jalapeño. Transfer into a container and set aside.
For the spicy mezcal margarita:
In a cocktail shaker combine mezcal, lime juice, Cointreau, jalapeño simple syrup, and ice. Shake well to combine.
Fill a glass with ice, pour the shaken margarita into the glass. Top with mint and fresh lime. Enjoy immediately.

*Leftover simple syrup can be stored in the fridge for 1-2 months.
