In a large bowl, combine the diced peppers, cucumber, red onion, chickpeas, tomatoes, and olives. Toss to combine. In a small mason jar combine the olive oil, garlic, tahini, lemon juice, lemon zest, vinegar, salt, pepper, and parsley. Shake well to combine, drizzle over the salad and toss again to combine.
Season as needed with more salt and pepper, garnish with more parsley, and enjoy! This salad is best served immediately.
