Ingredients
1tbspExtra virgin olive oil
1mediumRed onionfinely diced
1lb.Lean ground beef
1tspKosher salt
1/2tspCumin
1/2tspGarlic powder
1/4tspChili powder
1, 15.5 oz.canPinto or black beansdrained, omit beans for Keto option
1cupSalsa
1, 4 oz.canDiced green chileswith juice
3Low carb or Keto tortillascut into 8 pieces
8ox.Colby jack cheeseshredded
Guacamole, Pico de Gallo, and fresh cilantro for garnish
Instructions
Preheat oven to 350 degrees F. In a large cast iron pan or oven-safe skillet heat olive oil over medium-high heat. Once warm, add in diced onion and sauté for 3-4 minutes until onions begin to soften.
Add in the ground beef and brown until cooked through, mix in seasonings.
Remove from heat and mix in the beans, salsa, and green chiles. Top the casserole evenly with a layer of the sliced tortillas and finish off with the shredded cheese.
Bake at 350 for 20 minutes or until bubbly. If desired, broil on high for 2-3 minutes to get the cheese and tortillas golden brown.
Top casserole with fresh guacamole, Pico, and fresh cilantro. Enjoy immediately.
