Cilantro Lime Yogurt Chicken Bowls with Creamy Green Sauce

These cilantro lime yogurt chicken bowls are flavorful and easy to make at home. The chicken is marinated in AE Dairy Whole Milk Yogurt keeping it extra moist and flavorful! Layered with rice, avocado salad, and a creamy cilantro yogurt sauce its great for weeknight dinner or meal prep.

2tbspCilantrochopped

For the Avocado Crema:

2tbspFresh lime juice
1tspFresh lime juice
1small bunchCilantro
2mediumAvocados
1smallJalapenoseeded if desired

For the Avocado Salad:
2mediumAvocadoscubed
Fresh cilantrochopped
1/2tspKosher salt
1tspFresh lime zest
1tspFresh lime juice
Thinly sliced fresh jalapenoif desired
Instructions
For the Chicken:
In a large mixing bowl combine the yogurt, lime juice, lime zest, cilantro, olive oil, garlic, and seasoning. Add in the chicken breasts and mix to coat in the yogurt mix. Cover and let marinate for at least 30 minutes, or overnight if needed.
After chicken has marinated, preheat the oven to 400 degrees. Add chicken to a sheet pan and bake for 20-25 minutes or until chicken reaches an internal temperature of 165. Let rest for 10 minutes before slicing.
For the Avocado Crema:
In a counter top bullet blender, combine yogurt, lime juice, lime zest, cilantro, avocados, jalapeno, and salt. Blend until smooth, if needed add in a touch of milk or cream to thin the sauce out.

For the Avocado Salad:
In a mixing bowl combine the cubed avocado, cilantro, jalapeno, lime juice and zest, and salt. Stir to combine, adjust seasoning as needed.
Serve sliced chicken over steamed rice with a scoop of the avocado salad and a drizzle of the avocado crema. Garnish with green onion, enjoy!

Notes
Use whole milk yogurt: AE Dairy Full-fat yogurt gives the best texture and helps tenderize the chicken and keep it moist. Make sure you have unsweetened yogurt!
Marinate time matters: Aim for at least 30 minutes, but a few hours in the fridge will give you deeper flavor. Don't let chicken marinade for more than 12 hours.
Grill or bake chicken: This recipe works great on the grill for added char, but baking it in the oven is an easy way to quickly cook the chicken.
Meal prep friendly: Store the chicken, rice, and sauce separately for best texture throughout the week. The avocado crema can be stored for up to a week.
