A one-pot soup recipe made with canned crushed tomatoes, seasonings, onions, garlic, and heavy cream. Blended until smooth, this soup is creamy and comforting. Inspired by Panera Breads menu recipe!
Heat a large Dutch oven over medium-high heat, add in olive oil and diced onions. Sauté for 2-3 minutes until onions begin to soften. Add in minced garlic and sauté for another 1-2 minutes.
Add in the crushed tomatoes, vegetable stock, heavy cream, sugar, and seasonings. Stir to combine, cover, and let simmer on medium for 15-20 minutes.
Once the soup has simmered, you can enjoy as it or blend with an immersion blender to get the soup extra smooth.
Serve garnished with croutons and fresh basil.
Notes
*Soup can be blended until smooth with an immersion or stand blender but it does not need to be. *1 cup of shredded parmesan cheese can be stirred into the soup after blending if desired for an extra creamy consistency.
