Ingredients
1 1/2 - 2lbs.Boneless, skinless chicken thighs
2tspKosher salt
Fresh cracked black pepper
3tbspOlive oildivided
1mediumYellow onionfinely diced
3-4clovesFresh garlicminced
5oz.Oil packed sun-dried tomatoesdrained and julienned
4oz.Fresh baby spinach
2oz.Parmesan cheesegrated
1tbspItalian seasoning
1 1/4cupAE Dairy heavy cream
Instructions
Pat chicken thighs dry and season both sides with salt and pepper.
Heat 2 tablespoons of olive oil in a large sauté pan over medium-high heat, sear chicken thighs for 3-4 minutes per side until golden brown. Remove from the pan and set aside.
Reduce heat to medium and add the remaining olive oil to the pan along with the diced onion. Sauté for 2-3 minutes until the onion begins to soften. Add in garlic and sauté for another 1-2 minutes.
Mix in the sun-dried tomatoes and fresh spinach, cook down over medium heat until the spinach is just wilted.
Add in the heavy cream, Italian seasoning, and parmesan cheese. Bring to a simmer, stirring often, and cook for 3-4 minutes until the sauce begins to thicken. Add the chicken thighs back into the pan and allow everything to cook over medium-low heat until the chicken is cooked through, 5-6 minutes.
Serve over mashed potatoes or pasta and enjoy!

*Chicken is done when it hits an internal temperature of 165 degrees F.
