Cook frozen chicken according to package instructions, if pieces are large, chop down smaller.
Warm corn tortillas in the microwave for a few seconds to make them easier to roll. Add a few pieces of chicken to each tortilla, top with a sprinkle of cheese and gently roll, use a toothpick to secure the tortilla. Continue until all of the chicken has been used.
In a large stock pot or Dutch oven heat vegetable oil over medium-high heat. Once warm, add in the rolled taquitos, let cook for 4-6 minutes or until golden brown and crispy. Continue frying the remaining tortillas in batches. Remove toothpicks before serving.
Serve immediately topped with shredded lettuce, jalapenos, and cilantro with fresh guacamole.

*Any frozen, breaded chicken can be used for this recipe.
