Not only is the corn casserole incredibly easy, but it has a delicious savory flavor with extra richness from the cheese and a slight sweetness from the corn. Simply combine everything, transfer to a casserole dish, and bake!
Preheat oven to 350 degrees F, lightly grease a baking dish.
In a large mixing bowl combine melted butter, eggs, and sour cream. Whisk to combine.
Add in the corn muffin mix, whole corn, creamed corn, salt, and pepper. Mix well to combine.
Transfer the corn mixture into the prepared baking dish, top with shredded cheese* and bake at 350 for 45-50 minutes. When done, the edges will be golden brown and the center should have a slight jiggle*. Serve immediately.
Notes
*You can either top your casserole with shredded cheese or mix it into the batter. I like to bake it on top so you get a cheese crust. *To test if the casserole is done, give it a slight jiggly. The middle should be slightly jiggly but still set up. If your casserole is not done add additional baking time, but watch so it doesn't burn.*Mix in bacon bits and chives for some extra flavor.
