Soft, homemade rice Krispie treats dipped in white chocolate and sprinkles, decorated with candy eyes and melted chocolate decorations to create a Frankenstein treat.

4tbspUnsalted butter
1/2cupCorn syrup
1tbspVanilla extract
10oz.Large marshmallows
6cupsRice cereal
10oz.White chocolate chips
1tbspCoconut oil
Green food coloring
Brown sprinkles
1oz.Semi-sweet chocolate chips

Instructions
Grease or parchment line a 9x13 pan, set aside.
In a large Dutch oven or sauce pan heat butter and corn syrup over medium-high heat until bubbly. Add in the vanilla extract and marshmallows, heat until marshmallows are melted, stirring constantly.
Remove from the heat and add in the rice cereal, mix to combine. Transfer the rice Krispie mixture to the prepared pan. Use your hands or a rubber spatula to firmly press down the rice Krispie's*. Let set for 20-30 minutes.
Slice rice Krispie bars into 10 even rectangles, place on a large pieces of parchment or wax paper.
In a microwave safe bowl combine white chocolate and coconut oil, microwave in 30 second intervals, stirring each time, until melted. Add green food coloring to the melted chocolate until the desired color is reached.
Dip the top half of each rice Krispie treat in the melted chocolate. Allow excess chocolate to drip of and lay on parchment paper to set, repeat with the reaming bars. Once the chocolate has had a few minutes to dry (but before it is completely dry) dip a section in brown sprinkles to create the hair. Add two candy eyes to each bar while the chocolate is still soft. Repeat with remaining bars. Allow everything to dry completely.
In a small microwave safe bowl, melt the semi-sweet chocolate chips. Transfer to a small piping bag or plastic sandwich bag. Snip off a very small piece of the corner and draw on stitches or smiley faces to finish of the Frankenstein, repeat on all bars as desired. Let chocolate set completely and enjoy!
Notes
*Store-bought rice Krispie's can be used as a shortcut. *Press rice Krispies down well so they stay together during decorating, make sure to focus on edges and corners. It can help to grease your hands or spatula prior to pressing down the mixture. *Green candy wafers can be used in substitute of white chocolate and food coloring. *See step-by-step photos above for reference.
