AE Dairy whole milk yogurt is combined with peanut butter and protein powder to create a delicious high protein treat. The yogurt mixture is formed and frozen then dipped in melted chocolate and topped with chopped peanuts.
In a mixing bowl combine, yogurt, peanut butter, and protein powder. Mix until smooth.
2, 5.3 oz. containers AE Dairy whole milk yogurt, 1/2 cup Peanut butter, 1/3 cup Vanilla protein powder
Line a sheet pan with parchment paper and scoop the yogurt mixture into 8 round or rectangular shapes. Place a popsicle stick or paper straw into the center of each bar. Freeze for 20 minutes until set.
In a separate mixing bowl combine chocolate and coconut oil. Microwave in 30 second intervals, stirring each time, until the chocolate is smooth.
10 oz. Chocolate chips or chunks , 1 tbsp Coconut oil
Remove the yogurt bars from the freezer and dip each one in the melted chocolate. While the chocolate is still soft, top with a sprinkle of chopped peanuts and flaky sea salt. This is best done in smaller batches.
1/4 cup Chopped peanuts , Flaky salt
Place the dipped bars back in the freezer for 10 minutes or until the chocolate is set. Enjoy frozen, leftover bars can be store in the freezer for up to a week.
Notes
*Dont want to use protein powder? You can omit and increase the amount of peanut butter until you have your desired consistency. *Freeze bars into any shape (round or rectangular) or use a silicone mold to help form. These can also be made more bite-sized in mini or standard paper cupcakes liners. *Leftover bars are best stored in a glass container or freezer zip top bag.
