Ingredients
4cupsWatermelon cubed
4miniPersian cucumberssliced
8oz.Feta cheese blockcubed
1/4cupExtra virgin olive oil
1tbspSoy sauce
1/2tspRed pepper flakes
1/2tspRice vinegar
1tbspSesame seeds
1/2tspKosher salt
Fresh cracked black pepper
Fresh basil or thymechopped
Chopped pistachiosfor garnish
Instructions
In a large mixing bowl combine watermelon, cucumbers, and feta cheese.
4 cups Watermelon , 4 mini Persian cucumbers, 8 oz. Feta cheese block
In a small mixing bowl combine olive oil, soy sauce, red pepper flakes, rice vinegar, sesame seeds, salt, and pepper. Whisk to combine. Drizzle over the salad and toss to combine.
1/4 cup Extra virgin olive oil, 1 tbsp Soy sauce, 1/2 tsp Red pepper flakes, 1/2 tsp Rice vinegar , 1 tbsp Sesame seeds, 1/2 tsp Kosher salt, Fresh cracked black pepper
Garnish with fresh basil and pistachios. Enjoy immediately.

Notes
*The classic Panera recipe is tossed in a Greek dressing and contains orzo pasta and red onion, I like this sesame vinaigrette for a little twist but Greek dressing could be substituted. Orzo pasta or Farro can be added for a heartier, more filling dish! Make sure to be gentle when combining so nothing get smashed, if adding avocado or "soft" ingredients it can help to add those after tossing.
