Peppers, onions, and chicken seasoned with homemade fajita seasoning on top of cauliflower rice and black beans

Ingredients
4-5LargeBell peppers, thinly sliced
2-3 MediumRed onions, thinly sliced
1 - 1 1/2lbs.Boneless, skinless chicken breast
3tbspOlive oil
212 oz. Bags cauliflower rice
115 oz.Can Black beans, drained and rinsed
Toppings, avocado, salsa, cilantro, fresh lime
Fajita seasoning:
1tbspCumin
2tspOnion powder
2tspChili powder
1tspPaprika
1tbspGarlic powder
2tspSalt
1tspPepper
1tbspMexican oregano
1tspCayenne pepper
Instructions
Preheat oven to 400 degrees F. In a small mixing bowl combine the fajita seasoning, stir to combine.
Transfer peppers, onions, and chicken to a large sheet pan. Drizzle with olive oil and season with fajita seasoning, toss well to combine. Bake at 400 degrees F for 30-35 minutes or until chicken reaches an internal temperature of 165 degrees F and peppers are tender. Allow to cool.
Fill each meal prep container with cauliflower rice and black beans. Evenly divide the pepper, onion, chicken mixture between the 5 bowls. Top with toppings as desired. Seal and store.
Notes
* Substitute regular steamed rice for cauliflower rice if desired
