Ingredients
2cupsQuick oats
1/2cupAlmonds, chopped
1/2cupPepitas
1/4cupChia seeds
1/4 cupGolden raisins
1/4cupDried cranberries
1/2tspSalt
3/4cupPeanut butter
1/2cupHoney
1tspVanilla extract
Instructions
In a large mixing bowl combine the oats, almonds, pepitas, chia seeds, dried cranberries, raisins, and salt. Stir to combine.
In a small, microwave safe bowl combine the peanut butter and honey. Microwave for 30-45 seconds until smooth, Stir in the vanilla. Pour over the oat mixture.
Stir well to evenly combine all ingredients. Use a measuring cup or portion scoop to scoop even sized cookies, Use your hands or press into a measuring cup to form cookies. Place in an airtight container and refrigerate for 4-5 days.
