Ingredients
2cupsMedjool dates, pitted
1/2cupDried apricots
1/2cupAlmonds, roasted and unsalted
1/2cupCashews, roasted and unsalted
1/2cupPeanut butter
2tbspHoney
1tspSalt
Instructions
In the bowl of a food processor or blender combine the pitted dates, apricots, salt, honey, peanut butter, almonds, and cashews.
Pulse in 15 second increments until the mixture starts to come together. Scrape the side of the bowl as needed. After about a minute the mixture should be uniform and stick together when formed into a ball.
Use a small portion scoop or a measuring spoon to scoop out even sized amounts of the fruit and nut mixture. Using your hands, roll into balls. If desired, roll the finished bites in chopped nuts. Store in an airtight container in the fridge for 5-7 days.
