Preheat oven to 350 degrees F, line a baking sheet with parchment paper, set aside.
In the bowl of a stand or hand mixer fitted with a paddle attachment, cream the butter and sugar together until fluffy, about 3-4 minutes. Add in the vanilla extract, molasses, and eggs - one at a time. Scrap down the sides of the bowl.
In a small mixing bowl combine the flour, baking soda, and salt. Stir to combine. Slowly add the dry ingredients into the wet ingredients, mix on low until fully combined. Cover the dough and allow to chill for 30 minutes.
Using a portion scoop, scoop even sized portions of dough. Roll each ball of cookie dough in granulated sugar. Place on the prepared baking sheet, spacing 2 inches apart. Bake at 350 for 9-11 minutes until golden brown. The cookies will be soft. Allow to cool slightly on the baking sheet, transfer to a wire rack to finish cooling. Store in an airtight container for up to a week!
