In a large mixing bowl combine the oats, chia seeds, shredded coconut, and mini chocolate chips, stir to combine.
In a microwave safe bowl combine the almond butter and honey, microwave for 30 seconds until slightly warm. Pour over the oat mixture, mix together until evenly combined.
Use a small portion scoop or a measuring spoon to scoop out even sized amounts of the oat mixture. Use your hands to roll them into balls. If desired, roll the finished oat bites in shredded coconut. Store in an airtight container in the fridge for 5-7 days.
