Preheat oven to 300 degrees F. Line a large baking sheet with parchment paper, set aside.
In a large mixing bowl combine the oats, almonds, pepitas, and sunflower kernels, stir to combine. In a microwavable safe bowl combine the coconut oil, maple syrup, and peanut butter. Microwave 30-45 seconds until warm, whisk to combine. Stir in the vanilla, cinnamon, and salt. Pour the liquid mixture over the oat mixture. Using a rubber spatula, gently fold all the ingredients together until fully incorporated.
Spread the granola mixture out evenly onto the prepared baking sheet and bake 15 minutes, remove from the oven and stir. Place back in the oven and bake for 15 minutes. Once done, remove from the oven and stir in the dried cranberries. Serve immediately or store in an airtight container up to 4 weeks!
Notes
**If you want crunchier granola, add 5-7 minutes onto the baking time.
