Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper, set aside.
In a large mixing bowl combine the oats, almonds, cinnamon, and chia seeds, stir to combine. Combine the honey, peanut butter, vanilla, and salt, stir until fully combined. Pour the liquid mixture over the oat mixture. Using a rubber spatula, gently fold all the ingredients together until fully incorporated.
Spread the granola mixture out evenly onto the prepared baking sheet and bake for 10 minutes, remove from the oven and stir. Place back in the oven and bake for 15 minutes. Once done, remove from the oven and stir in the shredded coconut. Serve immediately or store in an airtight container up to 4 weeks!
