In the bowl of a food processor or blender combine the ricotta, honey, and a pinch of salt, blend until smooth. Top the toasted sourdough with the whipped ricotta, sliced peaches, a drizzle of honey, and fresh thyme.
If desired top the finished toast with fresh berries and serve immediately. Any unused ricotta will store in the fridge for 3-4 days.
