Preheat oven to 400 degrees F. Line two large baking sheets with parchment paper. Cut each sheet of puff pastry into 4 even pieces, transfer the puff pastry squares to the prepared baking sheet.
In the middle of each puff pastry square, arrange a layer of the sliced brie and top with a layer of peach slices. Fold the edges of the puff pastry inwards, use a fork to press down. Brush the edges of each pastry with beaten egg. Drizzle each pastry with olive oil, a light drizzle of honey and season with salt and pepper.
Bake at 400 for 18-20 minutes until the brie is melty and the puff pastry is cooked through. Remove from the oven, drizzle again with honey and sprinkle with fresh thyme. Serve immediately and enjoy!
