Baked ham and egg cups with roasted sweet potatoes

Ingredients
For the egg cups:
10Large eggs
10Slices honey ham*
Shredded cheese, optional
Salt and pepper
For the roasted sweet potatoes:
1-2mediumSweet potatoes, diced small
3tbspOlive oil
Salt and pepper
Instructions
For the egg cups:
Grease a 12 cup muffin tin, line each cup with a slice of ham. Press down gently to fill the muffin cup*. Crack one egg into each cup*, season with salt, pepper, and shredded cheese if desired.
Bake at 350 degrees F for 20-25 minutes, or until the egg is set.
For the sweet potatoes:
Transfer diced sweet potatoes onto a sheet pan, drizzle with olive oil and season with salt and pepper. Toss to coat. Bake at 350 degrees F for 25-30 minutes until fork tender.
Allow everything to cool and portion into meal prep containers, Seal and store for up to a 5 days.
