I love grabbing a few of these bites in the morning, they are a great source of protein. All you need is a muffin tin or reusable silicone muffins cups! Add in cheese or chopped veggies for extra flavor and nutrients if desired. Pair these bites with roasted sweet potatoes and you have a well balanced, easy breakfast that is budget friendly!
Press the ham slices down into each muffin cup and crack an egg into each.

Roast sweet potatoes until for tender.

- Silicone Muffin Cups – the perfect, reusable dividers to separate pickles and olives from hard crackers or bread
- Glasslock Glass Food Storage Containers – the square containers are the perfect size for lunches, stain proof, and they are dishwasher safe
- USA Pan Half Sheet Pan – my go-to sheet pans, these are truly non-stick and clean up nicely.
Cost Breakdown:
- Eggs – $1.47
- Ham – $3.39
- Sweet potatoes – 2.48

Per serving (5 servings): $1.67
Instructions:
For the egg cups:
- Grease a 12 cup muffin tin, line each cup with a slice of ham. Press down gently to fill the muffin cup*. Crack one egg into each cup*, season with salt, pepper, and shredded cheese if desired.
- Bake at 350 degrees F for 20-25 minutes, or until the egg is set.
For the sweet potatoes:
- Transfer diced sweet potatoes onto a sheet pan, drizzle with olive oil and season with salt and pepper. Toss to coat. Bake at 350 degrees F for 25-30 minutes until fork tender.
- Allow everything to cool and portion into meal prep containers, Seal and store for up to a 5 days.
