In a large bowl, combine the carrots, oil, salt, and pepper. Toss to combine.
Preheat air fryer to 400 degrees F. with a cook time of 10 minutes. Add in the carrots. Air fry for 10 minutes, flipping halfway through.
For the feta:
While the carrots are cooking add the feta, garlic, and maple syrup to the base of a food processor. Pulse until creamy, scrapping the sides as needed. Season with black pepper.
On a large serving platter, spread the whipped feta over the base, top with the baby carrots. Sprinkle with fresh thyme and a drizzle of maple syrup if desired. Serve immediately.
Notes
*The whipped feta is optional, if desired serve carrots alone.
