Absolutely, this side dish is a great easy way to add in extra nutrients. Roasted baby carrots are healthier than they are raw. After cooking, carrots are easier to digest and release more vitamin A!
How do I preheat my air fryer?
Simply turn your air fryer on, set to the desired setting (air fry, roast, bake), set the temperature, and cooking time. Press start and your air fryer will begin to preheat, it will beep when it is ready for food to be added.

Instructions for the roasted carrots:
For the carrots:
- In a large mixing bowl, combine the carrots, oil, salt, and pepper. Toss to combine.
- Preheat air fryer to 400 degrees F. with a cook time of 10 minutes. Place carrots into the air fryer basket in a single layer. Air fry for 10 minutes, flipping halfway through.
For the feta:
- While the carrots are cooking add the feta, garlic, and maple syrup to the base of a food processor. Pulse until creamy, scrapping the sides as needed. Season with black pepper.
- On a large serving platter, spread the whipped feta over the base, top with the baby carrots. Sprinkle with fresh thyme or fresh parsley and a drizzle of maple syrup if desired. Serve immediately.
Notes:
*The whipped feta is optional, if desired serve carrots alone.
*Any leftover whipped feta will keep in an airtight container in the fridge for 3-4 days.
*To avoid overcooking the carrots, start with less time and add additional minutes as needed.
*Carrots can be seasoned with additional seasonings like garlic or onion powder, or Italian seasoning. You could also top with a sprinkle of brown sugar for sweetness.
