 Carrots on a platter

We love this easy recipe, it’s the perfect quick side dish for busy weeknights!

Instructions for the roasted carrots:

For the carrots:

  • In a large mixing bowl, combine the carrots, oil, salt, and pepper. Toss to combine.
  • Preheat air fryer to 400 degrees F. with a cook time of 10 minutes. Place carrots into the air fryer basket in a single layer. Air fry for 10 minutes, flipping halfway through.

For the feta:

  • While the carrots are cooking add the feta, garlic, and maple syrup to the base of a food processor. Pulse until creamy, scrapping the sides as needed. Season with black pepper.
  • On a large serving platter, spread the whipped feta over the base, top with the baby carrots. Sprinkle with fresh thyme or fresh parsley and a drizzle of maple syrup if desired. Serve immediately.

Notes:

*The whipped feta is optional, if desired serve carrots alone.

*Any leftover whipped feta will keep in an airtight container in the fridge for 3-4 days.

*To avoid overcooking the carrots, start with less time and add additional minutes as needed.

*Carrots can be seasoned with additional seasonings like garlic or onion powder, or Italian seasoning. You could also top with a sprinkle of brown sugar for sweetness.
