In a large sauté pan heat olive oil over medium high heat. Once warm add in the diced green bell pepper and red onion. Saute 3-4 minutes until they begin to soften. Add in the diced tomatoes, hot sauce, and seasonings. Saute for another 2-3 minutes until everything is tender.
In a large mixing bowl combine the veggie mixture, chopped chicken, beans, corn, and shredded cheese. Combine.
Fill each egg roll wrapper with about 2 tablespoons of chicken mixture, fold in the sides and roll up towards the top, keeping tight. Brush the top edge with water and roll the egg roll closed*. Repeat with remaining wrappers.
Preheat your air fryer using the "air fry" setting, at 400 degrees F for 12-15 minutes, depending on how crispy you want the egg rolls. Once preheated add the egg rolls in a single layer, spray lightly with cooking spray. Cook for 12-15 minutes until crispy, flipping halfway through. Enjoy immediately with your favorite sauces.
